The ContourHD is also a popular choice. There is a nicely packaged unit (albeit a bit too expensive) that allows you incorporate cockpit audio called the Contour A/V-ator. I'm not really sure why the cables make it an extra $300 more than the basic camera, but the link is:

It has really nice 1080p HD recording and a compact size. The GoPro is popular, too, but without the audio.

I agree with Scotty that a "packaged" version of the feed would be great for generating revenue. There are plenty of outside angles that wouldn't give up the secrets teams use.
